Mainstream desktop is all-in-one with built-in audio & video, and small form factor with low-power are preferable. More powerful desktop allows discrete graphic card for different applications such as gaming or even GPU supercomputing projects which is closed to workstation today. Server may need compute power with optional RAID for data redundancy, and mostly rack-mountable chassis in cold room or data center. Workstation needs additional 3D video card for CAD/CAM, stereographics, simulation .. either single or dual processor motherboard.
